Lavash with Minced Meat and Cheese in the Oven

Simple, hearty, perfect for dinner, a work snack, or school lunch! Lavash with Minced Meat and Cheese in the Oven is an easy and very appetizing dish. The recipe suits everyday meals and can be modified with different fillings - meat, vegetables, or cheese.

Preparation
Step 1
Take thin rectangular lavash (2-3 sheets). If dry, sprinkle with water to soften. I used pork mince, but you can use pork+beef mix or chicken.
Step 2
Peel and wash onion. Chop finely. Heat refined vegetable oil in a skillet. Fry onion over low heat until golden, stirring constantly.
Step 3
Add minced meat to the skillet. Break up clumps with a fork. Season with salt and pepper. Simmer under lid for ~15 minutes. Transfer cooked meat to a plate and let cool.
Step 4
Grate hard cheese using a medium grater. Any high-quality cheese that melts well works. Hard cheese can be replaced with non-salty mozzarella.
Step 5
Wash and dry parsley leaves, chop finely. Fresh dill can be used instead.
Step 6
Mix grated cheese and chopped herbs into cooled minced meat.
Step 7
Cut lavash sheet in half (or into four pieces for smaller rolls).
Step 8
Place 1-2 tbsp filling on a strip of lavash.
Step 9
Fold into a small parcel: fold sides first, then roll from the bottom twice.
Step 10
Repeat with remaining strips. You can also fold into squares or triangles if using round lavash.

Line a baking tray with parchment. Arrange parcels. Beat one egg in a small bowl, brush the tops with a silicone brush. Bake in a preheated 180°C (356°F) oven for ~20 minutes. Oven times may vary. Remove when lavash turns golden.
Step 12
Serve warm with salads, pickles, or fresh vegetables. Leftovers can be reheated in a microwave or oven the next day without losing taste. Enjoy!
