Lavash with Egg and Herbs in a Skillet

Preparation
Step 1
You can use any greens you like. I used parsley and dill.
Step 2
Wash the parsley and dill, dry them, and remove thick stems. Finely chop the greens.
Step 3
In a bowl, beat the eggs with a whisk until smooth, add salt, and spices to taste if desired.
Step 4
Heat vegetable oil in a skillet. Pour the beaten eggs into the pan and cook over medium heat, stirring constantly, until done. The egg mixture will resemble soft flakes.
Step 5
Transfer the cooked eggs to a plate and let them cool slightly. Add the chopped greens and mix well.
Step 6
Cut the lavash into 4 pieces. I used thin Armenian lavash, about 12×16 inches (30×40 cm).
Step 7
Divide the filling visually into 4 portions. Place one portion on the lower part of each lavash piece. Cover the remaining pieces so they don’t dry out.
Step 8
Fold the lavash over the filling and tuck in the sides.
Step 9
Roll up the lavash into a neat envelope shape.
Step 10
Add a little oil to a skillet of suitable size. Fry the lavash envelopes on one side until golden.
Step 11
Flip and fry the other side until cooked through.
Step 12
Serve the lavash with egg and herbs immediately. Enjoy!
