Lavash with Cheese Fried in a Pan

A very tasty and quick breakfast for the whole family! Lavash with cheese fried in a pan are crispy pockets with juicy filling, ready in 20 minutes. A delicious hot snack for a family meal, also great to take on a picnic!

Preparation
Step 1
Start with the filling. Choose cheese types to your taste - for example, replace mozzarella with suluguni or feta.
Step 2
Grate both cheeses on a fine or medium grater. Mozzarella comes in two types - pizza and brined. Either works. If using brined mozzarella, remove from brine and pat dry.
Step 3
Wash, dry, and finely chop dill and parsley. Optionally, substitute or add green onions, cilantro, or a mix of herbs.
Step 4
Combine cheese with herbs, sour cream, and mayonnaise. Season with black pepper. If cheeses are salty, do not add extra salt.
Step 5
Mix until uniform. The filling should not be runny.
Step 6
Prepare the base for the pockets. Instead of Armenian lavash, you can use 1-2 sheets of wheat tortilla roll. They keep shape well.
Step 7
Cut lavash into strips about 3 inches (7-8 cm) wide. A standard sheet (27×14 in / 70×35 cm) can be cut in half, then into 3 strips each (6 strips total). Lavash dries quickly, so cut last. Keep covered until use.
Step 8
Place 1 tbsp of filling on one edge of each strip.
Step 9
Fold into triangles, tucking in edges to prevent filling leakage.
Step 10
Heat vegetable oil in a pan over low heat. Fry each triangle for 2-3 minutes per side until golden.
Step 11
Serve hot while the cheese is still melted. Enjoy!
