Step 1
You can choose the cheese type according to your taste - for example, replace regular cheese with mozzarella, suluguni, or feta. Instead of Armenian lavash, you can also use wheat wraps.

Lavash dries quickly, so cut it last, after the filling is ready. Until then, keep it sealed in an airtight bag. Grate the cheese on a coarse grater.

Wash all the herbs, dry, and chop finely. You can use any herb mix you like. I used dill, cilantro, and parsley. Green onions, basil, or ramsons also work.

In a bowl, mix chopped herbs with grated cheese. Taste the cheese first - if it’s salty enough, don’t add spices. If it's neutral, you can season the filling with salt and pepper.

Cut the lavash into 6-8 parts. Place 2 tablespoons of filling at the edge of each piece.

Roll the lavash into envelopes, tucking in the sides to prevent cheese from leaking during frying.

Preheat a dry skillet over medium heat. Place the lavash envelopes in the skillet and fry for 3-5 minutes on each side until golden and crispy. Toast it more or less based on your preference.
