Lavash Roll with Cucumber and Cheese

Preparation
Step 1
You’ll need thin Armenian lavash. How to choose the right lavash? First, check the production date on the package. Do not buy expired bread. Fresh lavash should have a pleasant smell.
Step 2
Wash and dry the cucumber, then slice it into thin slices or rounds. If the skin is not tough, damaged, or bitter, you don’t need to peel it.
Step 3
Boil the eggs until hard. How to do that? Place the eggs in cold water and heat over low heat. Once the water boils, cook for 9 minutes. Then pour cold water over them to cool. The sudden temperature change will help peel them more easily. Let them cool, peel, and grate on a coarse grater.
Step 4
Grate the cheese on a coarse grater. Any kind of cheese works, as long as it’s fresh, tasty, and aromatic. To make grating easier, place it in the freezer for 15-20 minutes beforehand.
Step 5
Wash the lettuce leaves and dry them thoroughly. Wet leaves can make the lavash too soggy.
Step 6
Lay the lavash sheet on your work surface and spread it evenly with mayonnaise. For extra flavor, you can add 1-2 cloves of garlic (pressed) to the mayonnaise beforehand.
Step 7
Mentally divide the lavash into 4 equal sections. On the first quarter, spread the grated eggs. On the second quarter, lay out the lettuce leaves. Then spread the grated cheese. On the last quarter, arrange the cucumber slices.
Step 8
Roll the lavash tightly into a log. How to do this properly? Roll carefully and as tightly as possible so the filling doesn’t fall out and the lavash doesn’t tear. A loose roll will be hard to slice neatly.
Step 9
Wrap the roll in plastic wrap and refrigerate for one hour. This will let it soak and soften nicely.

Slice the finished roll into serving pieces and serve. Enjoy your meal!
