Lavash Khachapuri with Cheese in the Oven

Hearty and incredibly delicious! Everyone will ask for more! Lavash Khachapuri with Cheese in the Oven is a simple pastry made from the most basic ingredients. You can experiment with different cheese combinations to create a unique flavor each time. Using lavash makes the cooking process much easier and faster.

Preparation
Step 1
Any fat content of kefir will work, but the higher the fat, the tastier the khachapuri. You can mix different cheeses to your taste. I use bryndza and sulguni. Instead of Armenian lavash, you can also use wheat tortilla.
Step 2
In a bowl, combine kefir, eggs, and salt. Whisk until smooth.
Step 3
Grate sulguni cheese using a coarse grater. You can replace sulguni with mozzarella or any other cheese that melts well.
Step 4
Crumble the bryndza with your hands into small pieces or also grate it on a coarse grater. You can replace bryndza with feta or another brined or soft cheese.
Step 5
Cut a square piece of lavash slightly larger than the baking dish. From the remaining lavash, cut 2 circles slightly smaller than the baking dish.
Step 6
Tear the leftover lavash into small pieces with your hands.
Step 7
Dip the small lavash pieces into the kefir-egg mixture.
Step 8
Place the large lavash square into a greased baking dish (Ø 18-20 cm).
Step 9
Add some grated cheese of both types on top. Lay one of the round lavash pieces on top. Sprinkle part of the grated bryndza and sulguni over it. Then, distribute the kefir-soaked lavash pieces on top. Repeat the layering process a couple more times, saving a bit of sulguni for the topping.
Step 10
Brush the edges of the lavash with the kefir mixture to soften them, fold them inward, and gently press to seal. Place the second round lavash sheet on top and brush it with the remaining kefir mixture.
Step 11
Sprinkle with the remaining sulguni. Bake at 350°F (180°C) for 25-30 minutes until golden brown. The exact time and temperature depend on your oven.

Remove the khachapuri from the dish, slice, and serve warm. Enjoy!
