Ladyfinger Cookies for Tiramisu

Original, fluffy, melt-in-your-mouth, delicious! Ladyfinger cookies - also known as Savoiardi - are the classic base for the Italian dessert Tiramisu. When baked at home, they taste far better and more natural than store-bought ones.

Preparation
Step 1
From this amount of ingredients, you will get a lot of cookies - about four baking sheets (12×16 in / 30×40 cm). I made half a portion, which is enough for one standard tiramisu.
Step 2
Carefully separate the eggs into yolks and whites, placing them in different bowls. Since fewer whites are needed, set some aside.
Step 3
Beat the yolks with a mixer, gradually adding part of the sugar (170 g / 6 oz for a full batch, 85 g / 3 oz for half). Add sugar in small portions, mixing well each time. Beat until the yolks turn pale and increase in volume.
Step 4
In another bowl, start beating the whites. First at low speed until foam forms, then increase the speed. Gradually add the remaining sugar (100 g / 3.5 oz for a full batch, 50 g / 1.75 oz for half), mixing after each addition. Beat until stiff peaks form - they should not collapse when you lift the beaters.
Step 5
Gently fold the beaten whites into the yolk mixture in several additions, using a silicone spatula and lifting the batter from bottom to top.
Step 6
Sift the flour and baking powder into the egg mixture. Sifting is important to aerate the flour, ensuring the cookies rise and stay airy when baked.
Step 7
Carefully fold the flour into the batter with a spatula until smooth. Transfer the mixture into a piping bag fitted with a round 0.4 in (1 cm) nozzle.
Step 8
Line a baking sheet with parchment paper. Pipe the cookies into long strips about 3 in (7 cm) in length. Do not press the bag too hard - they should remain tall. Leave space between them as they expand while baking.
Step 9
Sprinkle the cookies with powdered sugar.
Step 10
Preheat the oven to 390°F (200°C). Bake for 10-15 minutes until golden. Remove, cool, and peel off the paper.
Step 11
Serve with tea or coffee, or use them for preparing tiramisu. Enjoy!
