Preparation
Step 1
Sift the flour in advance to enrich it with oxygen. This makes the batter softer and more elastic.

For the pancake batter, use a deep bowl to avoid splashes. Crack in the eggs, add sugar (adjust to taste), and beat lightly with a mixer until foam appears.

Pour in the prepared kefir and mix.

Add sifted flour mixed with baking soda. Knead into a smooth batter without lumps. A mixer works great for removing flour clumps.

Separately, heat the milk until hot (but not boiling, about 140°F / 60°C). Pour it into the batter, add vegetable oil, and mix again.

The pancake batter should be quite liquid. You can adjust with more flour or milk, but for pancakes with holes, it must stay thin.

Heat the pancake pan until very hot. Before frying the first pancake, lightly grease it with vegetable oil. Pour the batter in a thin layer - it immediately forms holes. Cook quickly, about 20-30 seconds per side.

Transfer the ready pancakes onto a plate, stacking them on top of each other. Cover with a lid so they don’t dry out. Serve with condensed milk, sour cream, or jam. Enjoy!
