Krill Meat Salad with Egg and Cucumber

You can make this krill meat, egg, and cucumber salad in at most 20 minutes; the rest of the time it needs to sit in the fridge to become even tastier. Step 1
How do you make a salad with krill meat, egg, and cucumber? First, prepare the necessary ingredients. Use large eggs; if the eggs are small, use 3.
Step 2
Wash the cucumber, pat dry, peel it, and cut into small cubes. The smaller you dice the cucumber, the tastier the salad will be. Some recipes even grate the cucumber on a coarse grater. I don’t recommend that, because it releases a lot of juice and the salad will become watery. And if you squeeze out grated cucumber, it turns out too dry. It’s better to dice it finely.
Step 3
Hard-boil the eggs, cool, and peel. Separate whites from yolks and grate them finely into separate bowls. The finer the eggs are grated, the more tender and airy the salad texture will be.
Step 4
Rinse the green onion, pat dry, and chop with a knife - not too fine, but not too coarse either.
Step 5
I recommend transferring the mayonnaise to a piping bag or a plastic bag and snipping off the tip. This makes it easier to apply without squashing the layers, which can happen when using a spoon.
Step 6
Place a serving ring (12-14 cm / about 4.7-5.5 in) on a plate. Make the first layer with the cucumbers. Pipe a mayonnaise lattice on top.
Step 7
Add the krill mixture on top of the cucumbers and smooth it out.
Step 8
Add the grated egg whites over the krill and drizzle with mayonnaise again.
Step 9
Sprinkle the whites with grated yolks and level the top. Refrigerate the salad for 30 minutes to let it soak. If you plan to keep it longer, cover the top with plastic wrap.
Step 10
Before serving, carefully remove the ring. Decorate the salad with green onion, a mayonnaise lattice, and pomegranate seeds. Enjoy!
