Korean-Style Meat and Cucumber Salad

Preparation
Step 1
Use bell peppers of different colors for a bright, appealing dish. Rinse cucumber, bell pepper, and peeled garlic in clean water.
Step 2
Cut cucumbers into thin strips about 2 inches (5 cm) long. Place in a bowl, sprinkle with salt, and leave for 10-15 minutes.
Step 3
Slice beef into thin, long pieces. Slightly freeze it first for easier slicing.
Step 4
Slice onion into thin half-rings and finely chop garlic. Optionally, use a garlic press.
Step 5
Cut bell pepper into thin strips.
Step 6
Heat vegetable oil in a skillet. On high heat, fry beef until cooked, about 3-5 minutes.

Fry meat in batches to ensure it sears rather than stews. Stir continuously to avoid burning.

Add onion and soy sauce to the skillet with beef. Fry while stirring for ~2 minutes.

Gently squeeze liquid from cucumbers. Place strips in a deep bowl, add coriander, sugar, chili (adjust spice to taste), and garlic.

Add beef with onions to the cucumbers.

Add bell pepper and vinegar.

Mix well and taste. Adjust salt, sugar, or vinegar if necessary. The dish should be sweet, sour, and spicy.

Let rest 5-10 minutes. Sprinkle with sesame seeds and fresh herbs. Serve!
