Kiwi Pie in the Oven

Bright, juicy, and flavorful! A shortcrust base with creamy filling and kiwi slices makes a perfect family dessert.

Preparation
Step 1
Start with the dough. Use premium wheat flour.

In a blender bowl, combine flour, diced butter, and sugar. Blend into crumbs. You can also rub it by hand, but a blender is much faster.

Pour the crumbs into a bowl and add one egg.

Quickly knead into smooth shortcrust dough. As soon as it forms a ball and stops sticking to your hands and bowl, it’s ready.

Spread the dough over the bottom and sides of a parchment-lined baking pan (Ø 9-10 in / 22-26 cm). A springform or tart pan with fluted edges works well. Place in the freezer for 10 minutes.

Cover the dough with parchment, fill with baking weights (like dry beans), and bake in a preheated oven at 356°F (180°C) for 15 minutes.

Meanwhile, prepare the filling. Choose firm kiwis; soft ones don’t hold shape well.

Peel the kiwis and slice into thin rounds.

Prepare the custard. Use large eggs; if small, take 3.
Step 10
Beat the eggs with sugar until fluffy and foamy.

Add sour cream and mix gently with a whisk or spatula.

Separately, whip cold cream until stiff peaks form.

Gently fold the whipped cream into the egg-sour cream mixture.

The mass should be airy, fluffy, and uniform.

Place half of the kiwi slices over the slightly baked crust in a single layer.

Pour the cream-egg mixture on top. Return to the oven for 25-30 minutes. If the surface browns too much, cover with parchment or foil.

Remove from the oven, let rest a few minutes. The top should set and support the kiwi slices. Arrange remaining kiwi slices on top and bake another 10 minutes at 320°F (160°C).

Cool the pie, carefully transfer to a serving dish, and serve. Enjoy!
