Kissel from Compote and Starch

Preparation
Step 1
You can use any compote - store-bought from a jar or homemade from berries or fruits. Different compotes give different flavors. Starch can be potato or corn. I use potato starch, but if using corn starch, add 1.5 times more.
Step 2
Strain the compote through a fine sieve to remove fruit. Pour a little into a glass to dissolve the starch.
Step 3
Pour the main part of the compote into a saucepan. Add sugar to taste (starch reduces sweetness). Place the pan on the stove and bring to a boil over medium heat.
Step 4
Add starch to the glass of cold compote and stir well until no lumps remain. Important: the compote must be cold. If starch is added to warm or hot liquid, it will clump. If you like thicker kissel, add more starch.
Step 5
Slowly pour the dissolved starch into the boiling compote in a thin stream, stirring constantly. Keep cooking, stirring, until it returns to a boil. Simmer for 1 more minute so the starch cooks fully.
Step 6
Remove from heat and let cool. To prevent a skin from forming on top, sprinkle with a little sugar without stirring.
Step 7
The kissel is ready! Pour into a jug and serve. Enjoy!
