Khinkali with Mixed Ground Meat

A hearty classic dish made from simple ingredients! A fairly easy recipe for preparing aromatic and juicy khinkali with ground beef, tail fat, onion, and spices in Georgian style. A meal that will delight many with its excellent flavor and aroma!

Preparation
Step 1
First, prepare the necessary products and spices for making this aromatic and juicy classic dish of Caucasian cuisine.
Step 2
For the dough, pour 230 ml (1 cup) of cold boiled water into a mug, add 1 teaspoon of salt, and stir well.
Step 3
Sift 500 g (about 4 cups) of premium wheat flour into a large bowl, make a well in the center, then slowly pour in the salted water and knead into stiff dough.
Step 4
Continue kneading the dough in the bowl for 15 minutes.
Step 5
Place the dough on the table and knead it thoroughly for another 7 minutes. Then put it in a plastic bag and place it in the freezer for 30 minutes.
Step 6
For the filling, put 500 g (about 1 lb) of ground beef with tail fat into a deep bowl.
Step 7
Grate 1 garlic clove on a fine grater and 1 medium onion on a coarse grater. Add them to the meat, then add 1 teaspoon of ground pepper mix and 1/3 teaspoon of hot chili pepper. Mix well.
Step 8
Chop 50 g (about 1/4 cup) of fresh cilantro (not too finely) and add it to the bowl with the meat. Mix everything well.
Step 9
Gradually pour in 500 ml (2 cups) of cold boiled water into the meat mixture and stir for 5 minutes until the filling reaches the right consistency.
Step 10
Take the dough from the fridge, knead it slightly on the table, then divide it into about 19 equal parts, each weighing about 40 g (1.4 oz).
Step 11
Roll out each dough piece with a rolling pin into flat rounds about 2 mm thick.
Step 12
Place one round on a small plate, then put 1 tablespoon of the meat filling in the center.
Step 13
Gather the dough around the filling in folds, aiming for about 18 pleats.
Step 14
Press out the air and form khinkali, then place them on the table.
Step 15
In a pot, bring enough water to a boil on high heat. Add the khinkali, return the water to a boil, and cook them for 7 minutes until done. Remove onto a plate.
