Step 1
How do you make khachapuri with suluguni cheese in the oven? First, prepare the ingredients for the dough.
Step 2
Sift 350 g / about 2 3/4 cups of flour into a bowl. This will enrich the flour with oxygen, making the finished dough softer and fluffier. Add the yeast and mix well.
Step 3
Warm the water slightly to about 38°C / 100°F. It should be pleasantly warm, but not hot. Otherwise, the yeast may die when it comes into contact with the water. Add the salt, sugar, and vegetable oil to the water.
Step 4
Pour the water into the flour. Knead the dough. First mix it with a spoon, then knead it with your hands. The dough will quickly become smooth, elastic, and non-sticky. During kneading, you may need more flour; use the remaining 50 g / about 1/3 cup, or a little more if needed. Cover the bowl and leave the dough to rise in a warm place for 30–40 minutes. I always put yeast dough in the oven with the light on.

While the dough is rising, prepare the filling.

Grate the cheese on a coarse grater, setting a little aside to sprinkle over the khachapuri later. Grate the butter as well. Mix the cheese and butter together.
Step 7
After rising, the dough will increase about 2 times in size.
Step 8
Separate half of the dough and place it on a floured work surface. Roll the dough into a circle about 5 mm / about 1/5 inch thick. Place half of the cheese filling in the center and spread it evenly.
Step 9
Gather the edges of the dough toward the center into a little bundle and pinch them closed.
Step 10
Carefully roll the piece with a rolling pin into a thin flatbread. Turn it seam side down. Make a small hole in the center with a knife to let the steam escape.
Step 11
Transfer the flatbread to a baking sheet lined with parchment paper or greased with oil. Brush the top with beaten egg. Sprinkle with the reserved cheese.
Step 12
Bake the khachapuri in the oven at 200°C / 392°F for about 20 minutes, until golden brown. The exact time and temperature depend on your oven. Remove the finished khachapuri from the oven and immediately brush it with butter. Serve hot.
