Khachapuri with Cheese

Fluffy, soft, and very delicious baked treat for the whole family! Khachapuri with cheese in milk can easily replace bread. A double layer of cheese melts inside and crisps on the outside, giving an irresistible taste and appetizing appearance. No one can resist this treat!

- tablespoon - 20 ml

Preparation
Step 1
Use only premium flour. Dry yeast can be replaced with fresh pressed yeast; use twice as much (about 12-15 g / 0.4-0.5 oz).
Step 2
Melt the butter in advance and cool it.
Step 3
Dissolve sugar in warm water heated to 98-104ºF (37-40ºC). Sprinkle dry yeast on the surface and leave until a foamy cap appears (10-20 minutes). If no foam appears, the yeast is poor quality and the dough won’t rise.
Step 4
Sift the flour into a large bowl. Add salt and mix.
Step 5
Make a well in the flour. Add the egg, warm milk, and melted butter. Pour in the activated yeast.
Step 6
Knead soft, elastic, and uniform dough. Shape into a ball, coat with vegetable oil, and place in a bowl. Cover with a towel and leave in a warm place for 1.5-2 hours to rise.
Step 7
While the dough rises, prepare ingredients for the filling and brushing. Instead of sulguni cheese, Imeretian cheese can be used.
Step 8
Grate the sulguni on a coarse grater.
Step 9
Punch down the risen dough and divide into 3 equal parts.
Step 10
Roll each dough piece on a floured surface into a circle 10-11 inches (25-28 cm) in diameter.
Step 11
Place about 150 g (5.3 oz) of grated cheese in the center.
Step 12
Fold the edges of the dough up and gather in the center.
Step 13
Turn the dough seam-side down and roll again into a circle of the same diameter.
Step 14
Place the khachapuri on a parchment-lined baking tray and brush with egg yolk.
Step 15
Sprinkle the remaining grated cheese on top. Bake in a preheated oven at 392ºF (200ºC) for 10-15 minutes until golden brown. Enjoy!
