Kefir Pancakes Without Oil

Preparation
Step 1
Use kefir with at least 2.5% fat. It should be at room temperature, so take it out of the fridge in advance and measure the needed amount. Use large eggs.
Step 2
Separate the eggs into yolks and whites. Make sure no yolk gets into the whites; otherwise, they won’t whip properly. Place the egg whites in the fridge.
Step 3
Add sugar and vanilla sugar to the yolks. Beat with a mixer until light and fluffy.
Step 4
Add room temperature kefir and beat again until smooth.
Step 5
Sift in the flour mixed with baking powder and beat until the batter is smooth.
Step 6
In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. When you turn the bowl upside down, the whites should stay in place.
Step 7
Gently fold the whipped whites into the batter using a spatula. The batter should be airy and fluffy.
Step 8
Heat a non-stick pan with a thick bottom on low heat (around 3 out of 9). Spoon the batter onto the pan to form small round pancakes. Cook with or without a lid for 3-4 minutes on each side until golden brown.
Step 9
Transfer the finished pancakes to a plate and serve. They go well with honey, jam, sweet sauces, fresh fruits, or berries. Enjoy!
