Preparation
Step 1
How to bake a kefir batter pie with potatoes and onions? First, prepare all the ingredients for the filling. Wash and peel the potatoes. Peel the onion. Preheat the oven to 180°C (355°F).
Step 2
Thinly slice the potatoes into rounds. For convenience, you can use a mandoline so the slices are evenly thick.
Step 3
Place a pot with a small amount of water on the stove and bring to a boil. Drop the potatoes into the boiling water for 1-2 minutes. Remove and let excess water drain. This quick blanch makes the thin slices half-cooked and helps ensure the potatoes bake through.
Step 4
Finely chop the onion and sauté it in a small amount of vegetable oil until lightly golden.
Step 5
Prepare the ingredients for the batter. In a deep bowl, mix mayonnaise, eggs, kefir, baking soda, sugar, and a pinch of salt.
Step 6
Mix everything thoroughly.
Step 7
Sift flour into the mixture and make the batter. The amount of flour depends on how thick your kefir and mayonnaise are; the batter should be like pancake batter.
Step 8
Grease the baking dish with vegetable oil. Pour in exactly half of the batter and spread it evenly with a spatula.
Step 9
Arrange half of the potato slices over the batter, spreading them evenly.
Step 10
Add the sautéed onion over the potatoes, season with salt to taste, and sprinkle with thyme. You can add other potato-friendly seasonings if you like.
Step 11
Evenly arrange the remaining potato slices.
Step 12
Pour the remaining batter over the potatoes and smooth it with a spatula.
Step 13
Place the dish on the middle rack of the oven. Bake for 30-40 minutes at 180°C (355°F). Check doneness with a toothpick in the center: if it comes out with wet batter clumps, bake a little longer. Enjoy!
