Preparation
Step 1
Use chicken breast fillet, as it’s less fatty. Ideally, use chilled meat. If using frozen chicken, thaw it in the fridge beforehand. You can replace the cream with sour cream.
Step 2
Wash the chicken fillet, pat dry, and cut into small cubes. You can substitute the chicken with turkey or pork.
Step 3
Wash the mushrooms, pat dry, and cut into small pieces. If using frozen mushrooms, take about 1.5 times more than needed because they’ll shrink significantly during thawing and cooking. You can replace champignons with other mushrooms like porcini or chanterelles.
Step 4
Peel the onion and dice it finely.
Step 5
Grate the cheese on a large or medium grater. Any cheese will work for this dish - hard or semi-hard. The important thing is that it’s tasty, good quality, contains no vegetable fat substitutes, and melts well.

Heat vegetable oil in a pan over medium heat. Add the onion and sauté until translucent, about 3-5 minutes.
Step 7
Add the chicken to the pan. Fry, stirring, for 5-7 minutes until golden. All excess moisture should evaporate from the chicken.

Add the chopped mushrooms to the chicken. Fry everything together until excess moisture evaporates from the pan.
Step 9
Sprinkle in the flour, nutmeg, salt, and pepper. Mix thoroughly. You can add other spices to taste.
Step 10
Pour in the cream. Simmer, stirring, until the mixture thickens.
Step 11
Fill the tartlets with the julienne mixture.

Sprinkle grated cheese on top. Bake the julienne for 5-7 minutes in a preheated oven at 180°C (approx. 350°F) until the cheese melts.

Transfer the finished julienne tartlets onto a serving plate, garnish with herbs, and serve. Enjoy your meal!
