Juicy Tender Pan-Fried Pork Chops

Preparation
Step 1
Prepare all the necessary ingredients. Which cut is best for chops? Pork loin is ideal - it isn’t too fatty and has no tough sinews. Use fresh, not frozen meat. If you only have frozen pork, thaw it first.
Step 2
Rinse the pork under running water, pat dry with paper towels, and cut into portions about 1 cm (0.4 in) thick. Cover each loin piece with a plastic bag and pound it on both sides. Why cover the meat with plastic? It prevents splatter while pounding, keeping your kitchen cleaner. Do the same with all pieces.
Step 3
In a small bowl, mix salt and sugar. In this recipe I used Adyghe-style seasoned salt (it contains a bit of dried spices), which improves the flavor. You can add your favorite spices if you wish. Rub each piece of pork loin with the salt-and-sugar mixture on both sides.
Step 4
Transfer the meat to a deep bowl. Pour in milk (any fat percentage is fine). Gently massage the meat with your hands and leave it in the milk for about 1 hour, mixing the pieces a couple of times during that period. The chops will absorb the milk and become very tender.
Step 5
Crack the egg into a deep plate and beat with a fork. Add a pinch of salt and ground pepper (I also added a little dry meat seasoning). Mix again.
Step 6
Dip the pork loin in the egg mixture on both sides, then coat in flour.
Step 7
Heat vegetable oil in a skillet. Fry the chops over medium heat on both sides until browned, about 3-4 minutes per side. Exact time depends on chop thickness, meat quality, your stove, and the pan you use.
Step 8
Transfer the cooked chops to a plate. If desired, sprinkle with chopped herbs. Serve the hot, tender pork chops with any side you like. Enjoy!
