Since the meat is not ground in a meat grinder but finely chopped with a very sharp knife, these patties have an extraordinary taste and texture! In this recipe, mayonnaise adds tenderness. If you follow a healthy diet, you can replace it with sour cream or a similar sauce.
Preparation
Step 1
To make the patties juicier, choose fatty pork cuts like shoulder or ham. Avoid lean cuts like pork loin or tenderloin—they won’t yield juicy patties.
Step 2
Rinse the pork under cold running water, pat dry with paper towels, and remove excess fat, cartilage, membranes, etc. Then chop the prepared meat into very small cubes using a sharp knife.

Place the chopped meat in a deep bowl. Add salt and spices—black pepper, nutmeg, and coriander.

Then add mayonnaise, mix thoroughly, and refrigerate the mixture for several hours (4 hours to overnight). This marination will enhance the flavor of the patties.

Before frying, add eggs and flour to the marinated meat mixture. Mix well. These ingredients help bind the patties during cooking.
Step 6
Heat vegetable oil in a skillet. Place a metal ring mold in the hot skillet, fill it with the meat mixture, level the top, then remove the ring. Repeat for the rest of the patties. Alternatively, use a spoon to form patties and slightly flatten them with the back of the spoon.

Fry the chopped meat patties over medium heat on both sides until a golden crust forms.
