Preparation
Step 1
Which turkey parts are suitable? Use tender, lean breast fillet or juicier thigh meat. You can add any other spices to taste.
Step 2
Wash and pat dry the turkey fillet. Cut into 1.5 cm thick slices. Sprinkle each piece with Herbes de Provence, salt, and pepper. I used a pre-mixed herb and sea salt blend, so I didn’t add extra salt.
Step 3
Wash, dry, and slice tomatoes into rounds. Choose firm, juicy tomatoes to retain shape; soft tomatoes may break down during cooking and spoil the dish’s appearance.
Step 4
Grate cheese using a medium or coarse grater. You can use any cheese, even soft varieties like processed cheese.
Step 5
Wash and finely chop parsley. Optionally, replace or mix with other herbs such as dill, cilantro, green onions, or a herb blend.
Step 6
Grease a baking dish with vegetable oil. Lay the turkey slices in a single layer.
Step 7
Place the tomato slices evenly on top of the turkey.
Step 8
Sprinkle with grated cheese. Bake in a preheated oven at 180°C (356°F) for 30 minutes.
Step 9
Garnish the cooked turkey with chopped herbs and serve with any side dish. Enjoy!
