Japanese-Style Rice
Fragrant, rich, zesty - perfect for dinner! Japanese-style rice is a hot dish made from cooked rice seasoned with vinegar and quickly fried chicken with vegetables. The rice stays fluffy with a bright taste, and the chicken remains juicy and tender because it cooks very fast.

Step 1
How do you make Japanese-style rice? Prepare the ingredients. Use regular short-grain rice, like for sushi or rolls. Besides carrots and peppers, you can add other vegetables - onion, green beans, eggplant, broccoli. Adjust the amounts of garlic, ginger, and soy sauce to your taste. Instead of rice vinegar, you can use regular 9% distilled vinegar, slightly diluted with water.

Rinse the chicken, pat it dry, and cut into small pieces.

Wash and peel the carrot, then cut it into thin, short strips.
Step 4
Cut the bell pepper flesh the same way.
Step 5
Slice the garlic into thin pieces.
Step 6
Add sugar and salt to the vinegar and stir.
Step 7
Rinse the rice well in several changes of water, then pour in clean cold water. Place the saucepan over high heat and cover with a lid. When the water boils, reduce the heat to low. Cook the rice for 10-15 minutes, until all the water is absorbed. Then turn off the heat and let the rice stand covered for 10 minutes. Pour in the vinegar mixture with sugar and salt and mix.
Step 8
Heat vegetable oil in a skillet. Add the chicken pieces in a single layer (if the batch is large, cook in parts). Sear over high heat, stirring, until the color changes. Then push the chicken to the side and add the vegetables (if there’s a lot of chicken, remove it from the skillet). Add the ginger. Quickly stir-fry the vegetables, then mix them with the chicken and keep on the heat for about 5 minutes, no more.
Step 9
Add the rice to the chicken and vegetables and mix. Pour in soy sauce and stir again. Taste and add salt or more soy sauce if needed (I added both salt and soy sauce).

Serve the Japanese-style rice right away. You can sprinkle it with herbs. Enjoy!
