Jacket Potatoes in the Oven
Fragrant and very tasty! An excellent side dish for any meal. Baking jacket potatoes in the oven takes almost no effort. This dish is a real helper when you do not feel like standing by the stove. Thanks to garlic and herbs, the potatoes turn out very aromatic and savory.

Step 1
How do you bake whole jacket potatoes in the oven? Prepare the necessary ingredients. To bake them well, choose the right kind of potatoes, because there are varieties that can remain raw inside even after an hour in the oven. Use the color of the flesh as a guide: the lighter it is, the more starch it contains, and the faster the potatoes will cook. You can replace the dried thyme and rosemary with fresh sprigs. The dish will only benefit from that, because fresh herbs have a stronger aroma.

Wash the potatoes thoroughly and scrub them with a brush. If the potatoes are young, do this carefully so you do not remove the delicate top skin. If the potatoes are from an older harvest, it is better to pierce them all over with a fork or toothpick. Turn the oven on to 200°C (400°F).
Step 3
Peel the garlic and cut it lengthwise into 2-3 pieces so that you get thin slices.
Step 4
Place the potatoes into a baking dish or onto a small baking tray. Drizzle them with olive oil. Put the potatoes into an oven preheated to 200°C (400°F) for 20 minutes. If you have dense potatoes with a firm skin, it is better to cover the dish with foil. This way they will cook through faster inside. After 20 minutes, remove the potatoes and pierce each one with a toothpick. The outer part should be soft, while the center should still remain slightly firm.
Step 5
Turn the potatoes over. Using a brush, coat them with the olive oil from the bottom of the dish. Sprinkle the potatoes with sea salt and dried herbs. Arrange the garlic and bay leaves around the potatoes. Return the potatoes to the oven and bake for another 20-25 minutes until done. If the potatoes are not baking well, cover the dish with foil.

Transfer the finished potatoes to a plate, drizzle them with the remaining olive oil with herbs and garlic from the dish, and serve them hot. Enjoy your meal!
