Ivlev-Style Batumi Salad
Light, vegetable-based, and served with an amazingly tasty dressing! Georgian-style salad with walnuts and tomatoes may seem simple, but the Caucasus-inspired flavor comes from the piquant walnut sauce with cilantro. This salad is often called Batumi or Batumi-style salad.

Step 1
How do you make Georgian-style salad with walnuts and tomatoes? Prepare the ingredients. You can use regular tomatoes, but choose ripe yet firm and fleshy ones so they do not spoil the appearance of the salad when cut and mixed. The bell pepper can also be yellow or green.
Step 2
Wash and dry the cucumber. If the skin is tough, it is better to peel it. If it is thin enough, leave it on and cut the cucumber into half-moons.
Step 3
Remove the seeds and stem from the bell pepper and cut it into strips.
Step 4
Wash and dry the cherry tomatoes, then cut them in half.
Step 5
Wash and dry the parsley, then chop it finely.
Step 6
In a salad bowl, combine the cherry tomatoes, cucumbers, bell pepper, and parsley. Mix everything.
Step 7
Prepare the ingredients for the walnut dressing.
Step 8
Peel the garlic and roughly chop it with a knife. You can also add the garlic as whole cloves, as the sauce will still turn out smooth.
Step 9
Place the cilantro, walnut kernels, khmeli-suneli spice blend, garlic, salt, and chili pepper into the bowl of a blender or food processor. Pour in the water.

Blend everything thoroughly with the blade attachment until almost smooth.
Step 11
Place the salad in a mound on a serving dish.

Drizzle the Batumi salad with the walnut dressing and serve. Enjoy!
