Italian-Style Baked Pumpkin with Cheese

Preparation
Step 1
How to bake pumpkin with cheese Italian-style? Prepare the necessary ingredients. You can use mozzarella in brine or the type meant for pizza. I used the mozzarella in brine.
Step 2
Peel the pre-washed pumpkin and slice it into pieces no thicker than 0.5 cm (about 1/5 in).
Step 3
Put some flour on a plate with low sides and coat each pumpkin slice in flour on both sides. Add more flour as needed.
Step 4
Place the floured pumpkin slices on a baking sheet lined with parchment paper. Drizzle each slice with olive oil and lightly salt, keeping in mind that Parmesan is already salty.
Step 5
Bake the slices in a preheated oven at 180°C (356°F) for 10 minutes. Not all my slices fit on one tray, so I used two.
Step 6
Grate the Parmesan on the finest grater.
Step 7
Remove the mozzarella from the brine and let the liquid drain. Slice the mozzarella into rounds and pat them very dry.
Step 8
Pour 1 tsp olive oil into the bottom of a baking dish.
Step 9
Arrange a layer of pumpkin slices slightly overlapping.

Place mozzarella rounds on top.
Step 11
Sprinkle evenly with grated Parmesan.

Add another layer of pumpkin slices.
Step 13
And repeat the cheese layers the same way.
Step 14
Finish the casserole with a layer of pumpkin. Sprinkle the top evenly with grated Parmesan.
Step 15
Cover the dish with foil and put it into the oven preheated to 180°C (356°F). Bake the pumpkin with cheese for 20 minutes. Then remove the foil, switch the oven to grill/broil and increase the temperature to 200°C (392°F). Bake until browned on top for 5-7 minutes.

Let the finished bake rest in the dish for 5-10 minutes, then serve. Enjoy!
