Italian Biscotti with Almonds
Quick and very tasty crisp cookies for tea! These cookies are very simple and quick to make from basic, accessible ingredients found in almost every kitchen. They can be stored in a closed container for up to 4 months.

Step 1
Pour the sugar and salt into a bowl. Sift in the flour and baking powder, then add the vanilla powder. Mix and make a well in the center.
Step 2
In a separate bowl, lightly beat the eggs and add them to the flour. Then pour the honey into the flour, add the citrus zest and softened butter. Knead the dough; it should become elastic and come together easily into a ball.
Step 3
Add the nuts and raisins to the dough. Rinse and dry the raisins beforehand. Mix everything well.
Step 4
Divide the dough into 2 parts, or bake it as 1 large log if desired, and shape 2 logs. Place the shaped logs on a silicone mat and bake in an oven preheated to 180°C / 356°F for 30 minutes, until a golden crust forms on top.
Step 5
Let the baked logs cool for 10 minutes, but not longer, then cut them into slices.
Step 6
Return the slices to the oven and bake for 10 minutes at 170°C / 338°F. Leave a small gap between the slices.
