Step 1
How do you bake Italian 12-Spoon Cake in the oven? Prepare the listed ingredients. I took the eggs and milk out of the refrigerator half an hour in advance. I used large eggs, milk with 3.2% fat, and all-purpose flour. I measured the flour by tablespoons with a small mound. Sift the flour so it becomes aerated. This will make the finished cake more tender and airy.

Preheat the oven to 180°C (350°F). Crack the eggs into a deep bowl, add a pinch of salt and the sugar. Beat the mixture with a mixer or whisk until it becomes lighter in color.

Wash the lemon and dry it with a towel. Finely grate the zest from the lemon and squeeze the juice from half of it. Add the milk, vegetable oil, lemon zest, and lemon juice to the bowl with the eggs. Mix until the ingredients are combined.

Add the sifted flour mixed with baking powder to the batter and stir with a whisk until combined. Bubbles will appear on the surface of the batter from the reaction between the lemon and the baking powder. The batter should be smooth and fall from the spoon in a thick stream, similar to thick batter for fritters. If needed, add a little more flour to achieve the desired consistency.

Prepare the baking pan. I used a ceramic pan measuring 20 x 20 cm, about 8 x 8 inches. Grease the pan on all sides with vegetable oil and dust it with flour, then shake off the excess. Pour the batter into the pan and place it into the preheated oven for 30-35 minutes. Check for doneness with a wooden skewer - it should come out dry from the center of the cake. The exact baking time depends on the characteristics of your oven.
Step 6
Remove the finished cake from the oven and let it cool in the pan. Then cut it into portions and serve with a glass of milk, a cup of tea, or coffee. When serving, you can dust the cake with powdered sugar.
