How to Salt Carp Roe at Home

Preparation
Step 1
You can use either table salt or sea salt. The roe can come from any freshwater fish (carp, common carp, perch). In this case, it’s from a 3 kg carp.
Step 2
First, carefully rinse the roe with filtered water if possible. Then, gently rub the roe through a colander using a spoon to remove the membranes. The colander holes should be larger than the eggs. Alternatively, you can press the roe through a grater with large holes.
Step 3
Place the cleaned roe into a glass or ceramic bowl. Do not use metal or plastic containers, as they can leave an unpleasant odor that will spoil the flavor.
Step 4
Prepare the brine - dissolve salt in a small pot of water and bring it to a boil. Boil for another 2 minutes. Optionally, you can add bay leaf, peppercorns, or other seasonings that are easy to remove later.
Step 5
Pour the boiling, very salty brine over the roe and gently stir with a fork to ensure the liquid gets between all the eggs. The roe will immediately change color to orange, showing where the brine didn’t fully reach. Let it salt for another 2 hours.
Step 6
Drain the salty water using a colander lined with cheesecloth. Let the roe sit and drain for another 5-7 minutes. Then place it in a clean dish, cover with a lid or plastic wrap, and refrigerate for 2 hours.
Step 7
You can additionally salt or rinse the finished roe with boiled water to make it lightly salted. It’s perfect to spread on bread with butter or serve as an appetizer or with tea. Enjoy!
