How to Freeze Zucchini for Winter
Simple and quick. A great way to prepare ahead. Freezing zucchini for winter is not difficult at all. Thanks to this, they retain almost all of their beneficial properties, which is very important. Frozen zucchini can be used for stews, soups, and other dishes.

Step 1
How do you freeze zucchini for winter? First, prepare the zucchini themselves. They can be young or mature, large or small, with seeds or without. The only thing is not to use damaged or wilted zucchini; all the others are suitable. Wash the zucchini thoroughly and dry them well with a towel. If you are using young zucchini or ones with thin skin, there is no need to peel them. Otherwise, remove the skin with a vegetable peeler.

Now choose the shape for freezing the zucchini. This mostly depends on what you plan to cook from this vegetable later. They can be rounds, cubes, slices, or hollow halves for stuffing later. I suggest cutting them into cubes or sticks. Frozen zucchini cut this way will work well for stews, soups, sautéed dishes, and other vegetable dishes. If you are using zucchini with seeds, remove them. They are usually found in larger zucchini.
Step 3
The cubes turned out to be about 1 cm by 1 cm, about 1/2 inch by 1/2 inch. This is the optimal size for the dishes that will later be prepared with them, though you can cut them a little larger. Also pat the cut zucchini dry with paper towels to remove the extra moisture that zucchini release.
Step 4
Next, divide the prepared zucchini into several portions. Their number depends on how many zucchini and what size you are preparing, or whether you are making several different kinds of cuts.
Step 5
Place all the portions into clean, dry containers with tight-fitting lids, special freezer bags, or vacuum bags. If you place the zucchini pieces into a bag, gently squeeze out the excess air and close the bag. If you use thin ordinary plastic bags, put them into two bags at once, because they can tear easily. Under low temperatures they become more fragile. Then place the zucchini into the freezer.
Step 6
If you freeze zucchini in containers as I do, when taking the vegetable cubes out of the container, the whole “zucchini block” often comes out at once. But do not worry. After transferring it into a plastic bag and pressing firmly a few times with your hands, the block will easily separate into cubes.
