Preparation
Step 1
Prepare the chickpeas. Packaged chickpeas are usually clean, but sort through them if necessary and remove any debris or damaged chickpeas.
Step 2
Place the chickpeas in a deep bowl and cover them completely with cold water. Use approximately 4 times as much water as chickpeas. Leave them to soak at room temperature for 10–12 hours. If possible, change the soaking water several times.
Step 3
Drain any remaining soaking water and rinse the chickpeas thoroughly.
Step 4
Place the soaked chickpeas in the multicooker pot and cover them with water. Close the lid and cook on the stew setting for 1 hour 30 minutes. Cooking programs and times vary between multicookers, so adjust them according to your appliance.
Step 5
Check the chickpeas once the program finishes. They should be tender but still hold their shape. If you plan to use the cooking liquid, leave the chickpeas to cool in it for a richer flavor.
Step 6
Carefully drain the chickpeas in a colander. Reserve the cooking liquid in a separate bowl, as it can be used in other recipes.
Step 7
Leave the cooked chickpeas to cool. Use them in salads, soups, stews, spreads and other dishes. Cooked chickpeas can also be frozen. Preparing a larger batch at once is convenient, as they freeze well and can be thawed whenever needed.
