How to Brew Coffee in a Cezve (Turkish Coffee Pot) Properly

Step 1
How to make proper coffee in a cezve? Prepare the ingredients. Use whole beans only, and they should be fresh - ideally no more than 1 month after roasting. The best choice for a cezve is Arabica: it’s less bitter, more aromatic, and not as strong as Robusta. Use bottled water (it’s softer than most filtered water). Sugar is optional; if you add it, choose cane sugar. Add a pinch of salt - it helps bring out the coffee’s flavor.
Step 2
Take a cezve - coffee is tastiest in a copper one, but stainless steel works too. Add coffee at a ratio of 2 tsp per serving. Add sugar and salt. Don’t worry: the salt won’t make it taste salty; it simply boosts aroma. Mix well. Then add water: 100-120 ml (3.4-4.1 fl oz) per serving. After that, don’t stir anymore; set the spoon aside.
Step 3
The water must not be above the narrowest part of the cezve - otherwise it won’t have space to rise during brewing.
Step 4
Put the cezve on medium heat. The coffee will warm gradually and a foam cap (crema) will start forming on top. As soon as that begins, reduce the heat to low and watch the foam closely.
Step 5
The foam will rise and try to “run away.” At that moment, remove the cezve from the heat and wait until the coffee calms down and the foam settles. Return it to the heat and repeat: let the foam rise, remove, let it settle. Do this 4 times for better extraction (so the coffee releases its aromatic oils). Do not let it boil - the best brewing temperature is 95-96°C (203-205°F).
Step 6
At the end, turn off the heat and pour 1 spoonful of cold or ice water into the cezve - this helps the grounds settle to the bottom. Wait another 1-2 minutes to finish extraction. Then pour the coffee into pre-warmed cups to preserve aroma (you can simply rinse the cups with boiling water beforehand). Serve.
