How to Braise Meat Properly for African Stews/Soups
Tender braised goat meat slowly simmered with onion, scotch bonnet, and seasoning until rich, flavorful, and perfectly soft.

Preparation
Step 1
Rinse the goat meat thoroughly and place it into a heavy-bottomed pot. Add the onion, scotch bonnet pepper, broth cube, salt, and enough water to cover the meat.
Step 2
Set the pot over low–medium heat and allow the meat to cook gently for 30 minutes without stirring, letting it begin to soften and develop flavour.
Step 3
After 30 minutes, give the pot a stir and check the liquid level. Add a little more water if needed, then continue cooking for another 30 minutes.
Step 4
Once the meat has cooked for about 1 hour, check for tenderness. If it has not yet reached your desired softness, cover the pot and cook for an additional 15 minutes or longer, until the meat becomes tender and fully cooked.
