In this recipe, tomatoes can be replaced with ketchup, canned tomatoes, or tomato paste. Adjust the proportions to your taste.
Preparation
Step 1
You can replace boiled sausage with smoked sausage, ham, dry-cured, or cooked-smoked meat. Mayonnaise can be substituted with rich sour cream.
Step 2
Instead of rye bread, you can use a baguette or white bread. It's better to buy pre-sliced bread to save time and get evenly cut, beautiful slices. Slice the bread into pieces about 0.4 inches (1 cm) thick.
Step 3
Slice the boiled sausage thinly. If the sausage has a large diameter, cut the slices in half.

Slice the tomatoes into rounds. If using cherry tomatoes, cut them in half. Choose juicy but firm tomatoes; soft ones lose shape during cutting and baking and spoil the dish's appearance.
Step 5
Grate the cheese on a coarse grater. (I prefer using a Korean carrot grater, which makes a nice lace-like pattern after baking.) Any cheese of your choice works well.
Step 6
Spread mayonnaise over each slice of bread. (For convenience, I put the mayonnaise into a piping bag and cut off the tip.)
Step 7
Place two slices of sausage and one slice of tomato on top of each mayonnaise-covered bread slice. You can skip the tomatoes or replace them with other vegetables if you prefer.
Step 8
Sprinkle grated cheese on top of the sandwiches.
Step 9
Preheat your oven to 350°F (180°C) and bake the sandwiches for 10–15 minutes until the cheese melts. Baking time depends on your oven. I used the "top+bottom heat" mode.
Step 10
Transfer the hot sandwiches with sausage, cheese, and mayonnaise to a plate, garnish with fresh herbs, and serve immediately while hot. Enjoy!
