Hot Oven-Baked Sandwiches with Egg

Preparation
Step 1
Toast bread works best, preferably square-shaped, so the sandwiches come out neat. I used boiled sausage, but ham or any meat will work. Ready-sliced deli meat is very convenient.
Step 2
Preheat the oven to 350°F (180°C) while you assemble the sandwiches. Take two slices of bread and cut out the centers, leaving a border about ½ inch wide. Leave the other two slices whole. Use the cut-out centers to make croutons.
Step 3
Grate the cheese on a medium grater. Any cheese works – hard, semi-hard, or soft (like mozzarella). The key is that it’s tasty, good quality, without vegetable fat substitutes, and melts well.
Step 4
Take a small baking tray or dish that will fit the sandwiches. Line it with parchment paper - easy cleanup afterward. Place the two whole slices of bread on the paper.
Step 5
Add slices of sausage or ham on top of the bread. Sprinkle lightly with cheese - just enough to help the egg stick to the meat. The egg is the star here.
Step 6
Place the bread “frames” (with cut-out centers) on top. Carefully crack one egg into each hole. Try to keep the yolk intact. Place a cherry tomato half next to the yolk for decoration. Sprinkle the eggs with a little salt and pepper, but keep in mind the cheese and sausage already contain salt.
Step 7
Bake for 15-20 minutes until the egg whites are set but the yolks remain runny.
Step 8
Remove the sandwiches from the oven and serve immediately. Enjoy!
