Hot Cheese Sandwiches in the Microwave

As simple as can be, filling, tasty - great for a snack or budget-friendly dinner! Hot cheese sandwiches in the microwave are a quick dish that helps when you need to feed the family fast. The recipe can be customized as you like. They taste like pizza but require much less effort!

Preparation
Step 1
I used pre-sliced baguette, but toast or regular white bread will also work. If your bread is whole, slice it evenly into slices about 0.4 in (1 cm) thick.
Step 2
Choose tomatoes that are not too soft or juicy, otherwise the sandwiches will get soggy. Wash, pat dry with paper towels, and slice thinly into rounds with a sharp knife.
Step 3
Use good quality hard cheese - its flavor will define the sandwiches. It should also melt well. You can replace it with mozzarella (non-brined) or suluguni.
Step 4
Spread each bread slice with a thin layer of soft butter. Sprinkle with red ground pepper to taste.

Place a paper towel on the plate you’ll use for microwaving. This prevents the bread bottom from getting soggy.
Step 6
Arrange sandwiches in a circle on the plate, leaving the center empty so heat spreads evenly.
Step 7
Place 1-2 tomato slices on each piece of bread.
Step 8
Top with 1-3 slices of cheese. Microwave on full power for about 1 minute, until the cheese melts.
Step 9
Serve hot, immediately, while still warm - they won’t be as tasty once cooled. Before serving, you can sprinkle with fresh herbs such as dill or green onion. I like sesame seeds, so I sprinkled them on top. Fresh salad leaves or favorite sauces make a great side. Enjoy!
