Honey Cake with Sour Cream Frosting

An excellent dessert made from the most affordable ingredients! A simple and quick recipe for a moderately sweet honey cake with a tender sour cream frosting that will pleasantly surprise you with its wonderful taste and is sure to please everyone!

Preparation
Step 1
First, prepare all the necessary ingredients for making homemade honey cake with sour cream frosting.
Step 2
To make the batter, take a saucepan, add 100 g (about 1/3 cup) of honey, place it on the stove, and bring it to a boil over medium heat while stirring. Heat for 1 minute.
Step 3
Remove from heat, add 1 teaspoon of baking soda, and stir.
Step 4
Return the saucepan to low heat and stir continuously while cooking the honey mixture.
Step 5
Remove from heat and add 120 g (1 stick) of butter.
Step 6
Stir until smooth and let the honey mixture cool slightly.
Step 7
In a large bowl, crack 4 eggs, add a pinch of salt, and beat with a mixer until smooth.
Step 8
Gradually add 120 g (½ cup) of sugar in two portions while mixing.
Step 9
Continue whisking until you get a fluffy white mass.
Step 10
Add 2 tablespoons of the egg mixture to the honey mixture, stir, then slowly pour the honey mixture into the rest of the egg mass, gently stirring to keep it airy.
Step 11
Sift 220 g (about 1¾ cups) of premium wheat flour into the bowl in parts, mixing each time.

Mix until you get a smooth, uniform batter of proper consistency.
Step 13
Line two baking sheets with parchment paper. Draw circles 18 cm (7 inches) in diameter, place 2 tablespoons of batter inside each, and spread evenly.
Step 14
Bake the layers in a preheated oven at 160°C (320°F) for 5 minutes each. You’ll get about 12 layers in total.
Step 15
For the frosting, place 500 g (2 cups) of 25% sour cream at room temperature in a deep bowl, add 2 tablespoons of powdered sugar, and beat for 3 minutes until smooth.
Step 16
Line a suitable cake form with acetate tape, then layer 10 cake sheets alternating with sour cream frosting. Chill for 1 hour.
Step 17
Crush the remaining 2 layers into crumbs using a blender or a fine grater.
Step 18
Remove the cake from the form and spread the remaining cream evenly over the top and sides.
Step 19
Sprinkle the crumbs evenly over the top and sides. Place the finished cake in the refrigerator to soak and set.
