Honey Cake with Cream Cheese Frosting

Step 1
Sift the flour for the dough in advance. Do not replace butter with margarine; cakes will become hard. Better to use inexpensive butter than expensive margarine.

In a nonstick saucepan, melt butter and honey. Let cool until warm.

Separately, mix eggs with sugar until uniform. A mixer can be used.
Step 4
Combine the honey mixture with the eggs. Return to heat, bring to a boil, and add baking soda.

Baking soda reacts with honey, causing the mixture to foam. Remove from heat, stir for a few more minutes, then set aside to cool to warm.

Gradually add sifted flour to the warm honey mixture and knead the dough. Adjust flour amount based on dough consistency.

The dough will be very soft and barely sticky. Let it rest 10-15 minutes.

Bake layers of any shape or size. You can make a 2-layer or 5-layer cake; here, we’ll make 3 layers. Roll out thinly and prick with a fork to prevent puffing.

Bake layers in a preheated 350°F (180°C) oven for 3-5 minutes. Honey layers bake quickly and turn golden. Let layers cool.

For the frosting, whip heavy cream with powdered sugar until fluffy, then fold in soft cream cheese.

Spread a little frosting under the first layer to prevent sliding. Pipe frosting over each layer. Optionally, add a little berry jam.

Assemble the entire cake.

Seal in an airtight container and refrigerate overnight. Cream moisture will soak into layers, making them soft.
