Homemade Tarragon Soda (Tarhun)

Preparation
Step 1
How to make homemade tarhun so it tastes like the store-bought one? Very easy. You’ll need a fresh bunch of tarragon (also called estragon). Use strongly carbonated mineral water. Wash and pat dry the lemon and lime. Zest the citrus and finely grate the zest. Squeeze the juice from the flesh into separate small bowls.
Step 2
Rinse the tarragon, pat dry, and remove any darkened leaves. Cut the bunch into 2-3 parts. The more tarragon you use, the more intense the flavor will be.
Step 3
Put the tarragon into a blender bowl, add the lime and lemon juice, and add the zest. If you want a brighter green color, you can add a handful of fresh spinach. Adjust the amount of lemon juice and zest to your taste - add more or less.
Step 4
Blend the greens and citrus into small pieces.
Step 5
Transfer the green mixture to a small saucepan, add most of the sugar, and pour in 500 ml clean drinking water (about 2 cups + 2 Tbsp).
Step 6
Place the saucepan over medium heat and bring to a boil, stirring occasionally. The infusion will turn a vivid green.
Step 7
As soon as it boils, remove from heat and let cool at room temperature. If you want it cold, chill it further in the fridge. If you want the drink to have the same color as store-bought Tarhun, add a little lime-green food coloring.
Step 8
Strain the mixture through a fine sieve or several layers of cheesecloth.
Step 9
Pour a little of the concentrated infusion into a glass, dilute with strongly carbonated water, and add sugar to taste. I didn’t add extra sugar because the tarragon infusion was already sweet enough. Enjoy!
