Homemade Soft Caramel
Amazingly delicious, for adults and children alike. Homemade soft caramel is made from a minimal set of ingredients. This topping will please the whole family. You can serve it with pancakes, crêpes, casseroles, or ice cream, use it in desserts, or simply enjoy it with tea.

Preparation
Step 1
How do you make homemade soft caramel? Prepare all the necessary ingredients. I recommend using heavier cream, at least 33% fat. With cream like that, the finished caramel will have a very creamy and delicate taste.
Step 2
First, melt the sugar. For this, it is best to use cookware with a thick bottom. But I have gotten used to doing it in a regular aluminum saucepan. The sugar should be spread in a thin layer. Put it over the lowest heat and wait until it starts to melt. Do not stir it. At the first signs of melting, simply tilt the saucepan in different directions so the sugar mixes a little on its own. That way it will melt more evenly.
Step 3
Pour the hot cream into the melted sugar. The mixture will start to hiss and foam. That is exactly how it should be.
Step 4
At this stage, the caramel will become hard. Keep the whole mixture over the heat for another 10–15 minutes and stir constantly. Gradually, the caramel will dissolve into the cream. Here it is important to be patient and not stop stirring.
Step 5
Strain the hot caramel through a sieve. This is necessary to remove any sugar crystals that may remain, so they do not crunch on your teeth and the mixture becomes smooth.
Step 6
Immediately add the butter to the hot caramel and stir so it melts completely.
Step 7
Stir the entire mixture until the butter is fully incorporated and the mass becomes smooth. Homemade soft caramel with cream is ready.
Step 8
Pour it into a jar and use it as needed. While hot, the caramel is quite liquid. Put it into the refrigerator until completely cooled. It will set and become thick and stretchy. Enjoy your meal!
