Homemade Salmon Philadelphia Rolls

Step 1
How do you make Salmon Philadelphia rolls? Prepare the required ingredients. Use short-grain rice made for rolls. Choose fresh, crunchy cucumbers with thin skin. Use lightly salted salmon or other red fish - or, if you’re comfortable with it, raw.
Step 2
For sushi, the rice must be cooked correctly - any short-grain rice works. Rinse it thoroughly, rubbing the grains between your fingers; change the water 5 times until it becomes clear. This is very important!
Step 3
Cover the rinsed rice with clean water and put it on high heat, bringing it to a boil. The water-to-rice ratio is 1:1.25 (for example, 1 cup rice : 1 1/4 cups water).
Step 4
Once it boils, reduce the heat to the lowest and cook on very low heat for 15 minutes. Do not open the lid and do not stir.
Step 5
Meanwhile, make the rice seasoning: add salt and sugar to rice vinegar and mix well.

The seasoning is ready!
Step 7
You can immediately peel (if needed) and cut the cucumber into strips. If the skin is tender, you can leave it on. The crunchier the cucumber, the better.
Step 8
Remove the rice from the heat and let it stand for 10 minutes with the lid on.
Step 9
Pour the prepared seasoning over the rice and mix - ideally with a wooden spatula.

Let the rice cool a bit, and your perfect sushi rice is ready!

Cut a nori sheet into 2 halves. Wrap the rolling mat with plastic wrap or simply cover it with a clean bag.
Step 12
Wet your hands with water and spread the cooked rice in a thin layer on the rough side of the nori.
Step 13
Using the mat, carefully flip the nori so the rice is facing down.
Step 14
Place soft cream cheese in the center - ideally Philadelphia, but any more budget-friendly cream cheese will work.
Step 15
Lay cucumber slices on top of the cheese. If you like, add avocado too.
Step 16
Using the mat, carefully roll up the roll.
Step 17
Slice the salmon very thinly and lay it on the mat in front of the roll. I have to say, this turned out to be quite a tricky step. The fish must be very high quality; it’s even better if you salt it yourself - then you’ll know exactly what it’s made from. And it’s easier to slice thinly if the fish is slightly frozen.
Step 18
Using the same mat, roll it up so the roll is covered with a layer of red fish. With a knife dipped in water, carefully cut the Philadelphia roll into 6-8 pieces.
Step 19
Serve the rolls with soy sauce, sprinkling sesame on top. Enjoy!
