Preparation
Step 1
Prepare all the ingredients from the list. If your fish is frozen, thaw it in advance. You can use any red fish for this soup; this time, I used salmon.
Step 2
Clean the fish from scales and rinse it. Place the fish pieces in a pot. Peel and rinse the onion along with the parsley. You can replace parsley with a few sprigs of dill if preferred. Add the onion and greens to the pot and pour in cold water. How much water to use? I used 1 liter, resulting in a rich and thick soup.
Step 3
Place the pot on the stove. Bring to a boil over high heat. A white foam will form as it starts boiling—remove it with a spoon. Then, reduce the heat and let the fish simmer under a lid for about 7-10 minutes.
Step 4
Meanwhile, prepare the other vegetables. Peel, rinse, and cut the potatoes and carrots as you like. I prefer to dice the potatoes and slice the carrots into rounds for this soup. Adjust the amount of potatoes to your taste.
Step 5
When the fish is ready, remove it along with the onion and parsley, placing them on a separate plate. A skimmer spoon works well for this.
Step 6
Add the potatoes and carrots to the pot. Once the soup returns to a boil, cook for about 10-15 minutes, until the vegetables are tender.
Step 7
Let the fish cool slightly, then separate it from the bones and cut it into pieces. You can remove the skin if desired. Return the red fish pieces to the pot.
Step 8
Add salt to taste and cook everything together for another 1-2 minutes. Finally, sprinkle the soup with finely chopped greens.
Step 9
Your red fish soup is ready! Serve it with a pinch of ground black pepper.
