Homemade Oven-Baked Chicken Nuggets

Preparation
Step 1
First, prepare the necessary ingredients. Use large eggs so there’s enough batter for all the chicken pieces. You can replace chicken with turkey, but then the cooking time, temperature, and calories will change. If the meat is frozen, thaw it in advance.
Step 2
Rinse the chicken fillet, pat dry with paper towels, and slice across the grain into pieces about 1 cm (≈0.4 in) thick. You can use a chicken breast and cut it into fillets. With this method you can also reheat ready-made frozen store-bought nuggets (or homemade ones), and you can make fish or potato nuggets as well.
Step 3
In a bowl, combine the chicken slices with olive oil, ground paprika, salt, and pepper. Mix thoroughly so every piece is coated with oil and spices. Cover the bowl with plastic wrap, a lid, or a plate.
Step 4
Marinate the chicken in the refrigerator for 2-3 hours, preferably overnight. If you’re short on time, 30 minutes at room temperature is enough. If you marinate for several hours, stir occasionally because the oil settles at the bottom. Preheat the oven ahead of time (about 10-30 minutes before baking).
Step 5
Mix the breadcrumbs with turmeric - this gives the nuggets a beautiful golden color. You can use store-bought breadcrumbs, or make your own: cube a loaf, dry it in the oven, then blend into fine crumbs.
Step 6
Sift the flour and mix it with a pinch of salt and pepper.

Lightly beat the eggs with a fork, add the milk, and whisk again until smooth.
Step 8
Take the marinated chicken pieces, coat them in flour first and shake off the excess. Then dip them into the egg mixture.
Step 9
Bread thoroughly in the crumbs - this ensures an even coating and an appetizing crust.
Step 10
Arrange the nuggets on a parchment-lined baking sheet. Drizzle a little olive oil under each piece. Bake for about 30 minutes at 180°C / 356°F on top + bottom heat + convection (fan). If you only have bottom heat, flip the nuggets to the other side after 15 minutes. Exact time and temperature depend on your oven.
Step 11
Transfer the cooked nuggets to a platter and serve hot with ketchup or another sauce. Store cooled nuggets in a dry, airtight container in the refrigerator for up to 3 days. They freeze well: freeze in a single layer first, then pack into a bag. Enjoy your meal!
