Homemade Noodles with Egg, Spinach, and Hard Cheese

Preparation
Step 1
Prepare all the necessary ingredients for making wonderful homemade noodles using this very simple recipe.

Pour 350 g flour, about 12.3 oz, into a large bowl.

Add 1/2 teaspoon of salt to the bowl with the flour.

Add 2 tablespoons of olive oil to the bowl. It can also be replaced with vegetable oil.

Crack and add 2 chicken eggs to the bowl.

Add 130 g of spinach, about 4.6 oz, previously blended until smooth.

Knead a firm dough, then place it in a plastic bag for 30 minutes.

After half an hour, divide the dough into 2 equal parts and place one of them back into the plastic bag.

Place the dough onto a table lightly dusted with flour and, sprinkling a little flour on top, press it down slightly.

Roll out the dough into a thin round about 1–2 mm thick.

Sprinkle the rolled dough with a small amount of flour.

Fold the dough in half and sprinkle flour over the top.

While dusting with flour, fold the dough 2 more times.

Cut the folded dough into fairly thin strips.

The amount of noodles you get will be enough for making soup or a full lunch dish.

Bring the required amount of water to a boil in a pot on the stove.

Add the desired amount of prepared noodles to the boiling water and stir. Once it returns to a boil, cook for 2-3 minutes.

Transfer the cooked noodles to a plate.

Add a little butter to the noodles.

Sprinkle grated hard cheese over the top.
