Homemade Mint Syrup
Original, fragrant, beautiful, and incredibly delicious. Homemade mint syrup is very easy to make, especially if you have your own garden. This syrup can be added to desserts, pastries, and even sauces, as well as to hot tea on long winter evenings or sparkling water in hot weather.

Preparation
Step 1
How do you make mint syrup at home? Prepare the ingredients. It is best to use freshly picked mint, preferably gathered in dry weather. Any mint will work for the syrup, but menthol varieties give the strongest aroma.
Step 2
Separate the mint leaves from the stems. The stems are too coarse and will not be needed. Wash the leaves, let the water drain off, and dry them in a single layer on a paper towel. Extra water will make the syrup thinner than needed. A salad spinner for herbs will be very convenient here.
Step 3
Place the leaves into a stainless steel saucepan with a thick bottom.

Add granulated sugar to the saucepan with the mint leaves. You can use not only regular white sugar, but also cane sugar or brown sugar. The latter two will give the syrup a yellowish color and a delicate caramel note. But it all depends on your taste.
Step 5
Pour water into the saucepan with the sugar and mint. Use filtered or bottled water. This helps the mint aroma develop more fully because the water is softer. Place over medium heat and bring to a boil.
Step 6
As soon as the mixture comes to a boil, add citric acid. This not only improves the flavor, but also prevents the syrup from crystallizing. Instead of citric acid, you can add lemon juice, but keep in mind that it may slightly overpower the menthol aroma.
Step 7
After the citric acid has been added, reduce the heat to low and simmer the syrup for 4-5 minutes at a gentle boil.
Step 8
Remove the saucepan with the mint syrup from the heat and strain it through a fine sieve. Pour it into clean, dry jars and close them with clean lids. After it cools, place it in a dark, cool place. If you want the syrup to be green, add a little green food coloring. Of course, this is not especially wholesome, but it looks quite natural and pretty.

If diluted a little, this syrup can be used for soaking sponge cake. You can add it to prepared tea, make cocktails based on the syrup, or add it to desserts. Enjoy your meal!
