Prepare all the necessary ingredients. Use odorless vegetable oil, or substitute it with olive oil. You can replace honey with 1/2 teaspoon of sugar or omit it completely. Feel free to add your favorite spices.

It’s best to use a tall container from an immersion blender. Pour the vegetable oil into it.

Crack the egg into the container, being careful not to break the yolk.

Add mustard and lemon juice. You can adjust the mustard amount to your taste. After the first attempt, you'll know how to tweak the proportions.

Pour in liquid honey. If your honey is crystallized, microwave it slightly until it becomes liquid. If you're using olive oil, honey helps mask its bitterness.

Place the immersion blender into the container, ensuring it covers the egg yolk. Turn it on and blend for about a minute. The mixture will gradually thicken and lighten, turning into a smooth, creamy mayonnaise.
