Preparation
Step 1
Begin by placing the egg yolks into a mixing bowl and adding the crushed garlic, mustard powder, salt, and a pinch of freshly milled black pepper. Combine thoroughly. With the groundnut oil in a jug and an electric hand whisk ready, add a single drop of oil to the egg mixture and whisk it in completely.
Step 2
Although it may sound slow, it’s essential that every drop of oil is fully incorporated before adding the next. After several drops, the mixture will begin to thicken and turn stiff and slightly lumpy. When it reaches this stage, add the vinegar to loosen the mixture.
Step 3
Once the vinegar has been added, the critical stage is over, and you can gradually pour the oil in a thin, steady stream while whisking continuously. After all the oil is incorporated, taste the mayonnaise and adjust the seasoning. If you prefer a lighter texture, whisk in a couple of tablespoons of boiling water.
Step 4
If the mayonnaise curdles due to adding the oil too rapidly early on, don’t worry. Simply place a new egg yolk into a clean bowl and slowly add the curdled mixture drop by drop, then continue adding the remaining oil as usual.
