Homemade Lemon Jam

Preparation
Step 1
Choose large, firm lemons with smooth skin. They have a thin white layer underneath. Bumpy lemons usually have a thick bitter pith, which makes jam too coarse.
Step 2
Scald the lemons with boiling water to wash and slightly soften them.
Step 3
Cut off both ends of each lemon. Slice the lemons into pieces, remove all seeds and any visible white membranes.
Step 4
Chop the prepared lemons in a convenient way - use a meat grinder or a food processor. Place the lemon mass in a pot, add sugar, and a little water. Let stand for 30 minutes so sugar starts dissolving.
Step 5
Put the pot on the stove, bring to a boil, and simmer for about 10 minutes, stirring to prevent burning. Remove from heat, cover, and let cool. The jam will become lighter and thicker. Bring to a boil again. For a smoother consistency, use an immersion blender.
Step 6
Prepare jars. Sterilize them in the oven, microwave, or over steam.
Step 7
Pour hot jam into sterilized jars, seal tightly with lids, cool down, and store in a cool place. Enjoy your treat!
