Preparation
Step 1
Crack the eggs into a saucepan and whisk until combined. Add the remaining ingredients and set the pan over a medium heat.
Step 2
Whisk continuously for 7-10 minutes, or until the mixture thickens slightly and coats the back of a spoon. Take care not to let it boil or the mixture may split.
Step 3
Remove from the heat and allow to cool. Transfer the curd into a sterilised jar (or two smaller jars), seal, and let it thicken as it cools further.
Step 4
Store in the fridge for up to a month, and once opened, consume within a week.
