Preparation
Step 1
It’s better to use yolks from large eggs. Vanilla sugar can be replaced with vanilla extract.
Step 2
Pour about 2/3 of the milk into a saucepan and heat over low heat until hot (do not boil).
Step 3
In a heavy-bottomed pot, add the egg yolks, vanilla sugar, and condensed milk. Mix well.
Step 4
Pour in the remaining milk, stir, and place the pot over medium heat.
Step 5
Stir the egg-milk mixture constantly to prevent sticking. As soon as it thickens, remove from heat.
Step 6
Add starch to the mixture and whisk until smooth.
Step 7
Return the custard base to medium heat, stirring, until it thickens into a uniform mass.
Step 8
Remove from the stove, pour in the hot milk from the saucepan, and mix until combined.
Step 9
Place the custard base back on medium heat, stir constantly, bring to a boil, then remove from heat. Cool to room temperature.
Step 10
Pour the cooled custard into molds and freeze for 3-4 hours. Time depends on mold size and your freezer.
Step 11
Remove the frozen ice cream from the molds and enjoy.
