Homemade Galette Cookies

Step 1
Prepare the ingredients. You may need more or less flour than specified; it depends on its properties and the other ingredients. You can adjust the salt and sugar to taste — for savory galettes, increase the salt and reduce the sugar. Use refined, odorless oil.
Step 2
Take a bowl, crack an egg into it. Be sure to wash the eggs before use, as even seemingly clean shells may contain harmful bacteria. It’s best to use food-safe cleaning products and a brush. Add sugar, salt, and vanillin (or vanilla sugar). If you’re making a savory version, exclude the vanillin. Add milk and vegetable oil.
Step 3
Whisk everything together with a whisk. I used a regular hand whisk, but you can also use a mixer. Although for this cookie, the fluffiness of the mixture isn’t as important.
Step 4
Sift most of the flour, all the starch, and baking powder into the liquid ingredients. Start kneading the dough with a fork, then with your hands. As you knead, you’ll determine if you need to add more flour. If the dough is too soft, sift in a little more flour.
Step 5
The result should be homogeneous, non-sticky dough. Gather it into a ball.
Step 6
Divide the dough into two parts — it will be easier to work with. Roll each part on a floured surface into a thin square sheet. The thickness of the sheet can vary depending on whether you want thinner or thicker cookies.
Step 7
Cut the sheet into squares or rectangles. I used a crinkle cutter, but a regular knife works fine too. You can also cut the cookies with cookie cutters. Gather the dough scraps into a ball again.
Step 8
Place the galette dough on a baking sheet lined with parchment paper. Prick each cookie with a fork in any random pattern.
Step 9
Bake the galettes in the oven preheated to 180°C (356°F) for 10-15 minutes. The exact time depends on your oven, so check it closely. My oven takes longer, I baked the cookies for the full 15 minutes until they were golden. Remove the finished cookies from the oven and cool them off by transferring them from the baking sheet.
Step 10
Serve the galettes with milk or tea. Enjoy your meal!
